Homemade Marshmallow Overloaded S'mores Bars

How does a buttery graham cracker crust slathered with a rich chocolate ganache filling and topped by more than 2 inches of homemade marshmallows sound? And what if you were to torch that marshmallow so that it's gorgeously caramelized and gooey? Getting excited now? If not, I'm not sure that you're still breathing!! You may be in need of emergency ingestion of one of these homemade marshmallow overloaded s'mores bars to zap you back into the land of the living!

Strawberry Crumble Bars

Sorry to be MIA this week--and I can't even take credit for these strawberry crumble bars which come to you courtesy of my 14 year old daughter who baked them while I was busy at rehearsal. They are amazing, she is amazing and I am amazed that I have raised a child who can not only search the internet for a recipe, bake it up perfectly but also take terrific pictures of it! My work is done!

Gooey Turtle Bars with Shortbread Crust

Before you read any further, you should probably hit the gym for an extra session or do a couple more laps on the track, because these gooey turtle bars with shortbread crust are so tantalizing, so tempting and so irresistible that you'll feel compelled to make them and eat them and I don't want to be responsible for the dreaded "December weight gain"!

Fruity, Nutty, Chewy Granola Bars

If you're trying to stay away from pre-processed, packaged foods and you're a fan of granola bars (and let's face it, who isn't?) you have got to try this homemade version! They're easy to throw together and so chock full of fruity, nutty, chewy natural goodness that I guarantee you won't be able to stay away from these and really, there's no need to (unless you find yourself eating say, 6 or 7 per day and then, well, let's just say, you may need help!)

One Bowl Baking's Apple Crisp Bars-Famous Fridays

Ok, and on to one of the things that makes life so worth living:  dessert!! And I have got a winner for you today. Easy-to-make, moist, apple-y bars with a crisp cinnamon-y oat topping that are just perfect for this time of year, courtesy of One Bowl Baking, by Yvonne Ruperti, our Famous Fridays honoree this week. In addition to writing about food and and developing new recipes, Yvonne is also a former bakery owner, who developed the one-bowl method for her own tiny-home-kitchen-apartment baking so that she didn't have to lug her heavy mixer out of the closet! LOVE IT!!

Annabel's Peanut Butter Blondies

You wouldn't think a plate of blondies could bring tears to someone's eyes, but I'm here to prove you wrong. You see, a couple of Saturdays ago, I had a rotten cold and was relaxing in bed--it was a definite" no-cook" night for me. We'd brought in a pizza for an early dinner and everyone was in the house doing their own thing--me blowing my poor nose and watching TV. All of sudden, my daughter Annabel, appeared with a plate of these amazing Peanut Butter Blondies, all gooey and warm, straight out of the oven--her first solo baking attempt! Knowing my fondness for things chocolate, peanut butter and chewy, she'd made them especially for me, saying, "Mom, you're always making things to help us feel better. I thought someone should do it for you!"  Hence the tears (mine) at the aforementioned plate of blondies.

Toffee Chews

These chewy bars are loaded with coconut, almonds and brown sugar. They're sort of like a blondie but with a shortbread-like base. Totally addictive, which is surprising considering the lack of chocolate involved here but when I brought these to my sister's house a few weeks ago, they were gobbled up, even by the little kids who said they didn't like coconut or nuts. Go figure!
