Dangerously Good Blueberry Bread
Just sayin', if you haven't had lunch and you make this extraordinary blueberry bread that's chock full of walnuts and has hints of lemon running throughout, you may be at risk of gobbling down half the loaf before you know what's happened. Not that I speak from personal experience of course--I'm just here with a hypothetical cautionary tale. Ha! But seriously, I've made a lot of quick breads in my day, and none have ever called out to me the way this one does. And maybe that's because it's more of a cake than a bread, but no matter--go get yourself some fresh berries and get started, 'cause this one's a keeper and the blueberry season is all too short.
Irish Soda Scones
Happy St. Patrick's Day!!! I'm not Irish and I don't usually make a big deal over the holiday, but I saw this recipe for Irish Soda Scones and thought, "Blarney, this looks fun!" And it was! These are slightly dense with a wonderfully bumpy, chewy exterior, a not too sweet doughy center and full of tangy currants and raisins. Absolutely delicious on their own or with a little butter and jam. And they are totally easy to make!
Whole Wheat Banana Bread
Last week I put a few bananas in a bag to ripen some pears that I bought and for some reason it took a lot longer for those pears to ripen than usual so I had several overly ripe bananas on my hands that were even too ripe for my husband to eat! It was either bye-bye bananas or hello banana bread and you can see which way I went. I'd never made a banana bread with whole wheat flour before and I wanted to see what would happen. Would it be too dense? Would it have a strange whole wheat taste that masked the banana flavor? I'm happy to report that neither of these came true and that the bread is totally delicious--darker than white flour versions but totally moist with a really nice flavor and texture. Even if you already have a favorite banana bread recipe, I urge you to give this a try!
