Easy Chicken and Feta Sandwiches

I know, I know, it's Monday again and with that comes---WHAT AM I GOING TO MAKE FOR DINNER TONIGHT?!! Yup, I feel it too--just because I write a food blog, doesn't make me immune to the age-old quandary. Why, oh why, can't I be less lazy and more organized over the weekend and prepare for the week ahead?!! But no matter, there are still delicious and easy ways to get around that laziness and turn out a meal that everyone loves and asks for again, like these Easy Chicken and Feta Sandwiches. They're the perfect example of how mixing together ordinary ingredients in just the right combination results in something that surpasses the sum of its parts--not sure if I've got that right--maybe I should just go with the simpler "try them, you'll like them". Either way, you can't go wrong.

Roasted Sweet Potato, Red Pepper and Cheddar Quesadillas (with Lime-Spiked Sour Cream)

What would you say to silky, smooth, garlicky, sweet potato puree, crunchy sweet red peppers and lusciously gooey melted cheddar sandwiched between two warm, crunchy flour tortillas?!! If a resounding YES is the answer, than have I got an easy vegetarian dinner for you tonight!! These Roasted Sweet Potato, Red Pepper and Cheddar Quesadillas are one of our new favorites around here and I know that once you taste them, you'll quickly fall in love too!

Tarragon Chicken Salad-Lightened Up

When I was a little girl my dad used to read me the Frances books. You know, Best Friends for Frances, A Baby Sister for Frances and my favorite (no suprise) Bread and Jam for Frances! Remember those? In Bread and Jam, finicky Frances finally takes a chicken salad sandwich for lunch and it sounded so good to me that I convinced my mom to send me to school with one too but unfortunately, unlike Frances,  I hated it and came home completely starving, vowing never to eat the stuff again. Well, flash forward an enormous amount of years, and now I love the stuff...except for all the calories. But with this lightened up version, caloric guilt is not a factor. Yes, I and you of course, can enjoy chicken salad to our hearts' content, just like Frances!!
