Good-For-You Apricot Peach Smoothie

Day 2 of Healthy Week! They say breakfast is the most important meal of the day and despite the fact that I have no idea of who they are, I agree. Usually I eat a bowl of oatmeal or sometimes Baked Oatmeal (my daughter's favorite) but now that the weather is getting warmer, it's fun to enjoy something cool, colorful and quick. All you need to make this a complete meal is to add some sort of protein, like maybe a hard boiled egg or a handful of nuts and you're good to go and fueled for the next several hours!

Literally, this only takes about 5 minutes to put together, so there's really no excuse not to make it even on a busy weekday morning. Plus, it's conveniently made with frozen fruit which you can keep for ages in the freezer, so there's no waiting for fruit to have to ripen either. Each sip is a creamy peachy experience! Have I given you enough reasons why you should make this yet?!! Here's the last one--though it feels like you're cheating, the whole thing has less than 300 calories, so guilt doesn't have to enter the picture here!!


Good-For-You-Apricot Peach Smoothie

Makes 1 serving

Prep Time: 5 minutes

Ingredients

  • 1/2 cup apricot nectar

  • 2 teaspoons honey

  • 1/8 teaspoon cinnamon

  • 1 cup frozen unsweetened peaches, roughly chopped

  • 1 tablespoon walnut oil

  • 4 ice cubes

The Recipe

1.  In a measuring cup, mix together the apricot nectar and the honey with a whisk till the honey is fully dissolved.

2.  Into a food processor or blender, combine the apricot/honey mixture, cinnamon, peaches, walnut oil and ice cubes and process for a couple of minutes until smooth and very thick. Pour into a glass and add a straw--it's "critical".
