Healthy Chickpea Salad

You owe it to yourself and to those you love to make this salad---not just because it's healthy, but because it's so darn good and only takes 5 minutes to throw together, so you can't even argue that you didn't have the time, right? 

Do you like chickpeas? When I was a kid, I remember hating them but now they're one of my favorite legumes and they're super-healthy for you too--high in fiber, protein and minerals! And this salad is a great way to get more of them into you!!

The other thing I love in this salad is the feta cheese. You could definitely leave it out if you're dairy sensitive or vegan and the salad would still be great, but it does add a wonderful salty kick and creaminess that my taste-testers really enjoyed.

This would be wonderful for a light lunch, even piled on some good bread or as a side for dinner. It would even work well as a party hors d'oeuvres served with some crackers. It's so colorful and appealing! Whatever! Just make it-- there are so many good reasons! C'mon you owe it to yourself!


Avocado, Chickpea & Feta Salad

Makes 4 servings

Total Time: 5 minutes (maybe 6 if you have trouble opening the can of chickpeas!!)

Ingredients

  • 1 can chickpeas, rinsed and drained

  • 2 ripe avocados, pitted and roughly chopped

  • 1 small red onion, diced

  • 1/3 cup feta, crumbled or cut into cubes

  • Juice of 1 lime

  • salt and pepper to taste

The Recipe

1.  Place first five ingredients into a medium bowl and mix together well. Season to taste with salt and pepper. Serve immediately. Salad is best on the day it's made but will keep for a couple of days stored in an airtight container in the refrigerator. Sprinkle on a little lemon juice to keep the avocado from going brown.
