Sauteed Snow Peas with Pine Nuts

On nights when you're pressed for time but still want to keep things fun, different and healthy, stir-frying your veggies is a great way to go. Literally, these take maybe 5-6 minutes to prepare, 4 minutes to cook and will be gobbled up in about 2 minutes, guaranteed! They're so easy I almost don't classify them as a recipe, but once again, I'm taking the advice of my very wise young daughter, "Mom, you have to post these. They're what regular people like to eat!".

The hardest part of the whole thing (other than going to the store to buy these) is snipping the ends of the snow peas during your prep time so that you don't get a mouthful of little strings. 

Once that's done, you cook them in a bit of olive oil along with the garlic and pine nuts, and stir in a bit of toasted sesame oil at the end. The beauty part of these is that the snow peas stay crisp and crunchy and have a slight Asian flair to them--totally addictive! I served these with some grilled chicken but if you wanted to make a vegetarian meal out of them, you could prepare some brown rice and serve them together--that's what I'm going to do next time! Yum!


Sauteed Snow Peas with Pine Nuts

Makes 4 servings

Prep Time:  5-6 minutes: Cook Time:  4 minutes

Ingredients

  • 2 1/2 tablespoons olive oil

  • 3/4 pound snow peas, washed and dried

  • 1/4 cup pine nuts

  • 1 garlic clove, minced

  • 1/4 teaspoon toasted sesame oil

The Recipe

1.  Cut the little strings off the ends of the peas. Heat the oil in a large pan over medium-high heat. Add the snow peas, garlic and pine nuts. Stir, coating with the oil. Cook for 3-4 minutes, stirring constantly. Don't let the snow peas get too soft. Transfer to a bowl and stir in the sesame oil. Serve right away.
