Blackberry Lime Fizz

Hiya! Just dropping in on this very summery feeling Sunday to share this incredibly refreshing and unusual mocktail with you. I've been cooking up a storm around here because both of our boys are home from school AND we're having a big family BBQ here later today. Yesterday, I did a little taste test with this and by the rate at which it was slurped up, I thought you might want to slurp up some too at your own weekend celebrations! It's so pretty and great for adults and kids! So brew up a batch of the delicious blackberry syrup and let it chill  (this would also be great on pancakes or ice cream), squeeze some lime juice into a glass, fill with ice and seltzer water and you've got yourself a tart/sweet eye catching warm weather treat!

Blackberry Lime Fizz

Makes about 2 cups of syrup which is enough for at least 8-10 drinks

Prep Time: Syrup has to cook for 20 minutes or so, the rest comes together in a snap

Ingredients

For the Blackberry Syrup

  • 1 cup sugar

  • 1 cup water

  • 1 1/2 cups fresh blackberries

For the Fizz

  • 3-4 tablespoons Blackberry Syrup

  • 1 lime, juiced

  • Seltzer water

The Recipe

1.  To make the blackberry syrup:  Place the sugar, water and berries in a medium saucepan and stir together gently. Bring to a boil, stirring often to dissolve the sugar. Lower the heat and let simmer, stirring every now and then, until the berries are very soft, 20-25 minutes.

2.  Strain the mixture into a bowl, pressing down on the berries to get as much juice out as possible. Let cool to room temperature and transfer the syrup to a jar or container and chill for several hours or up to 2 weeks.

3.  To make the Fizz:  Place some ice cubes in a tall glass. Add in the syrup and lime juice. Pour the seltzer in, add a straw, stir it up and taste. If it's not sweet enough add a bit more syrup. Enjoy!
