No-Bake Nutella Pudding Pie Cups
Happy Pi Day!! Or as it's otherwise known, the mathematical celebration that gives us all an excuse to eat more pie because are we really going to quibble over the omission of one little letter?!! YUM!! Now, being ovenless and kitchenless does present somewhat of a challenge in the pie department, but I didn't want to let the day go by and so I present these easy No-Bake Nutella Pudding Pie Cups for your Pi Day pie-eating pleasure. If the thought of creamy Nutella pudding with a layer of crushed cookie crumbs and whipped cream makes you dreamy, you are going to ♥️ these big time!!
Really these come together in a snap. Dangerously so! Like you could make these practically anytime under almost any conditions, such as in your teenage son's bedroom on a hot plate. Yeah, that kind of easy!!
Another reason for my adoration of these little cups is the versatility of crust and topping options. We crushed up some chocolate wafers to use as our "pie crust" but you could also sub in crushed Oreos, graham crackers, shortbread or anything your heart desires. And I didn't because the act of running downstairs to the garage for one more thing from the fridge seemed insurmountable yesterday, but you could add a little melted butter to those crumbs to get more of a crumb crust feel. When I'm feeling more athletic, I will definitely have to try it that way too! Plus, you could sub out the sweetened whipped cream for chocolate whipped cream and some crushed hazelnuts or a dusting of cocoa powder or some crushed up Heath bars--you get my drift...let your imagination or pantry offerings be your guide.
Whatever you decide to do, every creamy, chocolate-y, hazelnut bite will be spoon and swoon-worthy!! Thank god for that old 3.14 phenomenon!! And if it's snowing where you are, wouldn't this be a yummy treat to curl up to?!! Stay safe out there!!
No-Bake Nutella Pudding Pie Cups
Makes 4 servings
Prep Time: About 10 minutes to make the filling and then some chilling time too
Ingredients
- 2 1/2 cups milk, divided (I used whole but you could also use 2%)
- Generous 1 cup Nutella
- 1/4 teaspoon salt
- 3 1/2 tablespoons cornstarch
- About 10 chocolate wafers (or Oreos, graham crackers etc) crushed up to yield about 1/2-3/4 cup of crumbs, divided
- Sweetened whipped cream
The Recipe
1. In a small bowl, whisk together 1/2 cup of milk and the cornstarch. Set aside.
2. Into a medium sized saucepan, combine the remaining milk, Nutella and salt. Heat over medium heat, whisking constantly until Nutella melts into the milk. Whisk in the milk/cornstarch mixture and bring to a boil. Then lower the heat to a simmer and let cook another minute or so to thicken up, stirring. Remove from the heat and let cool for about 20 minutes, stirring often to prevent a skin from forming and to help the mixture cool faster.
3. Into serving bowls or glasses, place a layer of the crushed cookies. When pudding has cooled a bit, pour it over the cookie layer, evenly distributing between the four glasses. Cover with plastic wrap and chill for several hours or overnight.
4. Before serving, top with whipped cream and more of the crushed cookies. Puddings can be made one day ahead and kept covered in the fridge.
