Overnight Steel Cut Oats
If breakfasts that pretty much cook themselves make you happy, then you are going to LOVE these Overnight Steel Cut Oats!! They are a staple in our house and have been a lifesaver throughout our kitchen renovation!
There are many terrific breakfast options here on the site but most are not exactly conducive to busy weekday mornings, no matter how much we wish Brown Sugar Cinnamon Swirl Pancakes were on the regular breakfast rotation! But maybe that's a good thing because they're not exactly the healthiest morning choice either. But never fear, because not only is a bowl of these fiber-rich steel cut oats good for you, but they're also ridiculously easy to make. So much so that I've hesitated in sharing them with you because there's barely a recipe going on here. The night before you want to eat these you simply boil 4 cups of water, stir in a cup of steel cut oats, let it boil for another minute, then cover, remove from the heat and let sit overnight for at least 8 hours. The magic occurs overnight when the oats absorb all the water and become chewy, little tender bites of deliciousness!! All you have to do in the morning is give everything a big stir and reheat over low heat or ladle some into a bowl and microwave. I'm partial to just a sprinkling of brown sugar on top (minimalist that I am) but you could also add fresh fruit, dried nuts, coconut, honey, syrup or whatever your heart desires. Who can resist a breakfast that cooks itself?!!
Overnight Steel Cut Oats
Makes 4-5 servings
Prep Time: 5 minutes, plus at least 8 hours overnight soaking time
Ingredients
- 4 cups water
- 1 cup steel cut oats (I always use McCann's)
- Brown sugar, fresh fruit, nuts, coconut, honey, maple syrup for topping (optional)
The Recipe
1. Bring 4 cups water to boil over high heat. Stir in the oats and let cook for one minute. Remove from the heat, stir, cover the pot and let the mixture sit for at least 8 hours. When ready to eat, give the mixture a big stir and reheat over low heat or ladle out into bowls and heat in the microwave.
2. Store leftovers in an airtight container in the fridge for 2-3 days. Reheats really well--I almost like it better after it's spent a day or two in the fridge--when reheated it gets a bit drier and more liked baked oatmeal.
