Six Soups to Make This Fall

Now that the temps are dropping, I think we can officially deem it soup season!! Yippee! It’s just about my favorite time of year!

If you live for soup season too, then today’s your lucky day because here are 6 of my favorite fall soups that are warm, cozy and so comforting!

They work equally well for lunch and dinner!

And all come together quickly and easily!

C’mon, what’s better than coming home on a chilly day, knowing you’ve got a pot of goodness waiting for you?!! Put up a pot of one of these and get those soupspoons ready!

1. Creamless “Creamy” Root Vegetable Soup

The best of both words—creamy cream-free soup (thanks to the puréeing of a potato) plus little chunks of all the root veggies you used—think carrots, parnsips and turnips, that float around and add so much flavor and texture! Absolutely lovely!

2. Light and Easy Sweet Potato and Apple Soup

Won’t tax your budget or your calorie limit but in no way will you sacrifice on flavor! The apples add just the right amount of sweetness and you will love how velvety smooth it is!

3. Easy Roasted Beef, Mushroom and Barley Soup

And dinner is served! Just add a salad and some crusty bread and you are good to go. This soup is so satisfying and hearty but comes together in under an hour even though it tastes like it’s been simmering all day!

4. Chicken Dumpling Soup

A meal in a bowl. There’s chicken, sweet corn, carrots, onions and wonderfully chewy and fluffy dumplings that you will find yourself fighting for!! Plus it’s “souper” simple to put together, lol!

5. Creamy Cauliflower Soup with Browned Butter Florets

Silky smooth but without a lick of cream so there’s no guilt either. And the browned butter cauliflower adds just the right flavor and texture to take this from “just a bowl of soup” to next-level goodness!!

6. Tomato and White Bean Soup

Hearty, vegetarian and loaded with stuff that’s good for you—white beans, tomatoes. spinach, carrots and tons of flavor!

Note: If you don’t already own an immersion blender, now is the time to pick one up ‘cause you really don’t want to have to purée the creamy soups in batches in the blender!!
