Spinach Pie

This is a recipe I've been making for a long time and I thought I should share it with you. It's the sort of quick throw together every busy person should have in their arsenal. Short of burning it, you really can't mess it up. Seriously, there is no written recipe for this. You just sort of do what feels right and less than an hour later you have a cheesy, oniony, spinachy delicious crustless quiche (minus all the high calorie heavy cream, which in my book means you can have dessert!)

Everyone in my family, except for one slightly difficult child, loves it, so it's a regular on the dinner rotation but you could just as easily serve it for lunch or brunch. There are only four main ingredients at play here: spinach, onions, eggs and shredded cheese. The hardest part is squeezing the liquid out of the defrosted chopped spinach and even that only takes a few minutes and a little hand wash to get rid of the pesky little spinach pieces that cling to your fingers.

All you do is throw a chopped up onion,  6 eggs, a 16 oz bag of defrosted chopped spinach and 2 cups of any shredded cheese into a large bowl and mix together. Then add some salt and pepper and any other spices you wish.

Spray a 13x9 baking dish with Pam, pour the mixture in and smooth the top.

Then bake it in a 350ºF oven for about 40 minutes and you wind up with a meltingly delicious casserole that you can supplement with some nice crusty bread and maybe a salad or some rice or pasta. It's that simple.  Also, if you aren't a big spinach fan, you can swap in an equivalent amount of chopped broccoli or some other veggie you do like--and it'll be great too! If you're trying to eat more meatless meals (and aren't we all?) this one won't make you feel like you're trying to be healthy-it just is, in its own sneaky little way! Spinach Pie

Serves 6-8 for dinner, maybe more if you're making it for lunch
Prep Time: 10 minutes (not counting time for spinach to defrost); Bake Time: 40 Minutes: Total Time: 50 Minutes

Ingredients

  • 16 oz. bag frozen chopped spinach, thawed and drained of all excess liquid
  • 1 large onion, chopped
  • 6 large eggs
  • 2 cups shredded cheese, any kind and combination (I used a mix of cheddar and mozzarella)
  • salt and pepper to taste

The Recipe

1.  Preheat oven to 350ºF. Spray a 13x9 inch baking pan with Pam or other vegetable spray.

2. In a large mixing bowl, combine spinach, onion, eggs, cheese and salt and pepper. Mix well. pour into pan and smooth the top. 

3.  Bake for 35-40 minutes until golden brown. Remove and cool for 5-10 minutes before serving.
