Happy Monday! If you’re busy, busy but want a quick and delicious way to add a healthy crunch to your day, Crispy Chick Peas are your answer!

Recently, I was eating a take-out salad where they added a scoop of these crispy little guys and it was such a game-changer that I thought how do I not have a recipe for this on the site?!!! ‘Cause now I want to add them to everything!! Salads, grain bowls, sandwiches…even just to nibble on as is!

They’re barely a recipe, you basically just cook them in a little olive oil and spices on top of the stove in a skillet, but if I’ve never done it before, maybe you haven’t either and we can make this little chick pea journey together, lol!

Crispy Chick Peas

Makes 4-6 servings

Prep Time: 15 minutes

Ingredients

  • Two 15-ounce cans chick peas, rinsed and drained

  • 1/4 cup olive oil

  • Generous pinch or two of sea salt, black pepper (or any other spices you’d like)

The Recipe

1. Pat chick peas gently with paper towel to remove as much liquid as possible.

2. Heat the oil in a large skillet over medium heat . Add the chick peas, salt and pepper. Let cook, shaking the pan every now and then for 12-15 minutes, until chick peas are golden brown and crisped. Drain on paper towels, let cool and serve.

3. Store in an airtight container at room temperature for several days.
