Roasted Parmesan Asparagus
Maybe you’ve been lucky enough to get your hands on some fresh asparagus.
Maybe you’re tired of whatever way you usually prepare this ultra-springy veggie and are looking for something new.
Maybe you’d be thrilled to know that this “recipe” (it’s hardly even that) comes together in just a couple of minutes, basically cooks itself and pretty much goes with any main course.
Maybe it’s time for me to stop all these maybes and just tell you that this Roasted Parmesan Asparagus is addictively delish—literally, you won’t be able to stop helping yourself to every tender, caramelized, cheesy spear—and that you should make this easy side asap, ‘cause maybe you’ll love it! (sorry, I couldn’t help myself!!)
Roasted Parmesan Asparagus
Makes 3-4 servings
Prep Time: 10 minutes; Bake Time: About 15 minutes (depending on how thick your asparagus is)
Ingredients
1 pound fresh asparagus
2 tablespoons olive oil
Kosher salt and black pepper
½ cup freshly shredded or grated Parmesan cheese (you could sub in any cheese you have on hand)
The Recipe
1. Preheat oven to 400ºF and line a large rimmed baking sheet with aluminum foil.
2. Trim the tough ends off of the asparagus and discard, Place the spears on the foil and toss to coat well with the olive oil and a couple of pinches of salt and pepper. Arrange asparagus in a single layer. Roast for about 10 minutes, until fork tender. Remove the pan from the oven and evenly sprinkle the Parmesan all across the top of the asparagus. Return to the oven to cook for another 5 minutes or so, until the cheese is gooey and beginning to brown. Serve immediately.
